Weekend Bread

This weekend I knew we needed bread, but I couldn't get myself to the store. I just didn't want to, so I made it homemade instead. We had milk, and while I enjoy and the kids love the everyday bread I wanted something that was a little softer.

So I grabbed the church cookbook and moulded 3 recipes into a 4c dough that made two smaller loaves. I typically like 3c loaves for daily bread needs, but I can never seem to remember this when I'm in the process of making bread.

We have a old Nova Scotia Kitchens book that is full of traditional recipes, and in it was one for french bread, so I made a couple baguettes at the same time. They were very simple to put together, but there are a few things that I can do better, techinque wise, to make them with a better crust.

First, I made them in the same oven as the load bread, which limited the temperature and moisture changes I could do. Second, I think I need to score the crust a little more aggressively. And finially I need to let it rise a little longer in the first step.

I will give these a try later this week. These first two will be gone mid way and they will make great sandwich or supper bread.
