Chocolate Fudge

My slightly modified version of Old Fashioned Chocolate based on the recipe from Taste of Recipe.

Old Fashioned Chocolate Fudge

  • 1/4 C butter
  • 3 C sugar
  • 2/3 C unsweetened Coca powder
  • 1-1/2 C whole milk
  • 1 TSP vanilla extract

  1. Line 8" square baking pan with foil (greased) or parchment.
  2. In a large, heavy saucepan, mix sugar, cocoa powder and salt.
  3. Gradually add milk, stirring until smooth.
  4. Place saucepan on burner at medium heat, stirring constantly bring to a rapid boil.
  5. Once boiling, insert candy thermometer and cook without stirring until the mixture reaches 234F, or soft-ball stage.
  6. Remove from heat.
  7. Add butter and vanilla, but don't stir. Let cool undisturbed to ~110F.
  8. Once cool, beat with a strong spoon, until it thickens and loses its glossy shine.
  9. Spread fudge in prepared panel and let cool completely.

Hints and Tips

  1. Letting the mixture cool without stirring helps keep the smooth texture.
  2. For the final beating, I recommend a heavy wooden spoon. I have broken the dollar store wooden spoons in the past doing this.
