Gingerbread Men Cookies - No Dairy

My version of no-dairy gingerbread men. Its based on a recipe from an old Good Housekeeping cookbook

Gingerbread Men Cookies - No Dairy
- 2-1/4 C Flour
- 1/2 C White Sugar
- 1/2 C Coconut Oil
- 1/2 C Molasses
- 1 Eggs
- 1-1/2 TSP ground cinnamon
- 1 TSP baking powder
- 1 TSP ground ginger
- 1 TSP ground cloves
- 1/2 TSP ground nutmeg
- 1/2 TSP baking soda
- 1/2 TSP Salt

- Into a large bowl add everything to a mixer. Beat until well mixed.
- Shape dough in ball, wrap and place in the fridge. 2-3h will do it.
- When chilled, pre-heat oven to 350F and roll out dough to ~1/8" on a floured surface.
- Flour your favourite gingerbread man cutter and cut. Re-roll the trimmings until all used.
- Place cookies on cookie sheets about 1/2" apart. Glaze with the egg white & water mixture.
- Bake for about 8min or until browned. Cool on wire racks.
- Decorate with frosting when cooled.
Hints and Tips
- If you don't have a gingerbread man cutter, make a template from paper and cut around it with a knife.
- If you want to have fancy eyes, mouth and/or buttons, use small nuts, raisins, currents etc. Place them on the cut out gingerbread man just before placing it in the oven.
- I know I say to chill these, but don't not too long. When they are very chilled, say overnight, the dough becomes crumbly, and hard to work with. Let warm, or work in a ziplock bag until they are a darker brown, but still relatively stiff. You will have a much better time rolling them out.
