Cinnamon Loaf
This recipe is unmodified from my revision of the Out of Old Nova Scotia Kitchens book. I never really know if I should call it a recipe or cookbook, because it is that, but it is more too. I highly recommend grabbing a copy for your kitchen bookshelf, it has a lot of gems.
This makes one loaf.
Cinnamon Loaf
- 1/4 C butter
- 1 C sugar
- 2 eggs
- 1 TSP vanilla
- 2 C flour
- 1 TSP baking powder
- 1 TSP baking soda
- 1/2 TSP salt
- 1 C sour milk
- 3 TB brown sugar
- 1 TB cinnamon

- In a small bowl mix the brown sugar and cinnamon together. Set aside.
- Cream together the butter and sugar.
- Add eggs and vanilla, blend well.
- In a separate bowl sift/blend the flour, baking powder, baking soda and salt.
- Add to the creamed mixer, along with the milk. Alternate milk and dry mixture in small amounts.
- Grease loaf pans with a bit of butter.
- Pour 1/2 of batter in greased loaf pan and sprinkle 1/2 of cinnamon mixture on top.
- Pour remaining batter and place the cinnamon mixture on the very top.
- Run/swirl a knife through the batter to distribute the cinnamon mixture.
- Bake in a 350F oven for 45min, or until done.
Hints and Tips
- I didn't have an sour milk, buttermilk, sour cream, etc. so I used milk, and it was still good.
- If you are using a stand mixer, you may want to double the batch or make sure that your paddle is set very well. Its hard to cream this small amount of butter and sugar with a loose paddle.
- To make sure that the loaf is done, take it out after 45min and check with a toothpick. Poke in the loaf to about the middle, and remove. If there is batter on the toothpick, place it bake in the oven for 10min. Re-check and repeat.
My Notes
The original recipe gives a range for the oven, between 350F and 375F. To complicate my loaf even more, we just bought a new stove which has much better controls than the one we had for the the last 10y or so. I used 350F exactly, and I'm pretty sure it stayed really close to that and it took quite a bit more than 45min to finish. I think I will try 360F next time to see how it does.
