Weekend Baking

I started the weekend making a couple of recipes from Out of Old Nova Scotia Kitchens including a Cinnamon Loaf and Rolled Oats Bread. This is the second Brown Bread that I attempted.

Rolled Oats Bread Recipe

I'm not happy with my first try with the rolled oats bread, and there are a couple of things that could be the reason. It was a little denser than I would like and the crust isn't pretty. The things that I want to test out before posting a recipe are:

  1. Letting the oats sit for the full hour (I only left them for about 40min)
  2. I used the proofing feature of the new oven and only covered the bowl with a towel. This dried out the top of the dough so I want to better seal it next time, either with a plate or plastic wrap.
  3. Warmer proof in the pan. I let it proof on the counter rather than the oven; and it didn't work as well as I would have liked.

After a couple more tweaks I will post a recipe here, I think it has more potential than the recipe from the Bently Cookbook.

On sunday I made a batch of burger buns for the week and prepared a couple batches of cookies for baking next weekend, regular ginger molasses and no-dairy.
